Why do electric cars have one pedal that controls both acceleration and deceleration?

I am wondering why the Audi e-Tron, and other electric cars, have a single pedal that serves as both the accelerator and brake. How does this work and what are the benefits?

The reason for this design is due to regenerative braking, where the electric motor converts kinetic energy from braking into electricity to recharge the battery. This is more efficient than traditional braking systems and also helps to extend the driving range of the car.
