What is the difference between Audi RS models and regular models?

I've been considering buying an Audi, but I'm not sure which model to choose. I see that there are RS versions of some models, but I'm not sure what that means and if it's worth the extra cost. Can someone explain the difference and give some advice on which one to choose?
